- 1 small head butter lettuce, chopped (approximately 3 cups)
- 2 cups cubed cantaloupe
- 1 medium cucumber, peeled and sliced
- 1 small green pepper, chopped
- 2 tablespoons salad oil
- 1/4 teaspoon pepper
- 2 tablespoons vinegar
Place lettuce, melon, cucumber, and green pepper in a salad bowl. Whisk together salad oil, pepper, and vinegar and pour over salad. Toss salad and serve immediately.
Yield: 7 cups. Serving size: 1 cup.
