- 1 cup prepared mashed potatoes
- 1/2 cup finely chopped broccoli or spinach
- 2 egg whites
- 4 tablespoons shredded Parmesan cheese, divided
Preheat oven to 400°F. Spray 18 mini (1 3/4-inch) muffin cups with nonstick cooking spray.
Combine mashed potatoes, broccoli, egg whites and 2 tablespoons cheese in large bowl; mix well. Spoon evenly into prepared muffin cups. Top evenly with remaining 2 tablespoons cheese.
Bake 20 to 23 minutes or until golden brown. To remove from pan, gently run knife around outer edges and lift out with fork. Serve warm.
Yield: 18 puffs. Serving size: 3 puffs.
