Cucumber With Yogurt Sauce

Refreshing and delicious, this sauce is as versatile as it is easy to make. Serve it as a dip with sliced pita and veggies at a fun family BBQ or on top of a beautiful piece of salmon at your next summer soirée.

Peel and dice the cucumber and place on paper towels to allow excess liquid to be absorbed. In a small bowl, mix yogurt, garlic, black pepper, 2 tablespoons of the mint, and parsley. Fold in diced cucumbers. Chill until serving time. Just before serving, sprinkle with 1 tablespoon chopped mint for garnish. Serve with pita triangles.

Yield: 3 cups. Serving size: 1/2 cup.
