Combine dry ingredients in a medium bowl. Combine egg whites, skim milk, and canola oil in a separate bowl with a whisk, then add to dry ingredients and mix with a wooden spoon. Heat an electric griddle or nonstick frying pan over medium-high heat, until water dripped onto the surface bubbles rapidly and evaporates (about 325°F for the electric griddle). Spray with nonstick cooking spray, then spoon rounded tablespoons of batter onto griddle or pan. Cook for about 2 minutes on each side until lightly browned. Place on a serving platter and repeat until all the batter is used.
Yield: about 18 coins. Serving size: 3 coins.
