- 1 cup uncooked wild rice (or wild rice and rice mixture)
- 1/2 cup sliced mushrooms
- 1/2 cup diced onion
- 1/2 cup diced green or red bell pepper
- 1 1/2 cups 98% fat-free reduced-sodium chicken broth
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Layer rice, mushrooms, onion, and bell peppers in slow cooker. Add broth, oil, salt, and pepper.
Cover; cook on High 2 1/2 hours or until rice is tender and liquid is absorbed.
Yield: 8 servings. Serving size: 1/2 cup per serving.
