- 1 medium cucumber
- 2 cups plain, fat-free yogurt
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 2 tablespoons plus 1 tablespoon fresh mint, finely chopped
- 2 tablespoons fresh parsley, finely chopped
Peel and dice the cucumber and place on paper towels to allow excess liquid to be absorbed. In a small bowl, mix yogurt, garlic, black pepper, 2 tablespoons of the mint, and parsley. Fold in diced cucumbers. Chill until serving time. Just before serving, sprinkle with 1 tablespoon chopped mint for garnish. Serve with pita triangles.
Yield: 3 cups. Serving size: 1/2 cup.
