Asparagus with Lemon & Mustard



  • 12 fresh asparagus spears
  • 2 tablespoons fat-free mayonnaise
  • 1 tablespoon brown mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon peel, divided


Fill large saucepan with 1 inch water; bring to a boil over high heat. Place asparagus in steamer basket; steam until crisp-tender. Rinse under cold water; drain and chill.

Combine mayonnaise, mustard, and lemon juice in small bowl. Stir in 1/2 teaspoon lemon peel.

Divide asparagus between 2 plates. Spoon 2 tablespoons dressing over each serving. Top with 1/4 teaspoon lemon peel.

Yield: 2 servings.
