Broccoli and Blue Cheese Salad



  • 4 cups broccoli florets, blanched and cut into bite-size pieces
  • 3 tablespoons reduced-fat olive oil vinaigrette dressing
  • 1/8 teaspoon red pepper flakes (optional)
  • 1 ounce blue cheese, crumbled


In medium bowl, combine all ingredients except blue cheese. Toss gently, yet thoroughly, until well coated. Gently stir in cheese.

Yield: 6 servings.

Serving size: 2/3 cup per serving.
