Combine orange juice, cornstarch, and sugar in a small saucepan over medium heat with a whisk. Stirring constantly, bring to a low boil and cook until sauce thickens, about 2 minutes. Remove from heat and allow to cool to room temperature. Core both apples and dice; you should have approximately 2 cups. Place apple pieces and Craisins into a small salad bowl. Pour cooled dressing over top, stir well to combine. Serve immediately or chill before serving.
