1 tablespoon chopped fresh chives
1 tablespoon chopped shallot

Combine herbs and seasonings in a large bottle or jar. Add vinegar, cover with a tight-fitting lid, and let stand 10 days, turning bottle a few times each day. Strain before using.

Yield: 1 quart.
