Raisin-Apricot Loaf Cake Mix

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sucralose-sugar blend
  • 1/2 cup firmly packed light brown sugar
  • 1/3 cup raisins
  • 1/3 cup finely chopped dried apricots

Directions

Sift together flour, baking powder, and baking soda in a mixing bowl. Add salt and toss to blend together. Using a spoon and a funnel made of waxed paper, spoon flour mixture into a 1-quart wide-mouth jar or other 1-quart decorative glass container. Level top of mixture in jar.

Place sugar blend and brown sugar into separate small, resealable plastic food storage bags. Seal bags. Mix together raisins and apricots and place into a small, resealable plastic food storage bag. Seal bag. Layer bags in jar. Seal jar with its lid.

Decorate jar lid with fabric tied with raffia, twine or ribbon or other decorations. Attach a homemade recipe card to jar describing how to use the mix.
