- 1/4 large honeydew melon, rind removed and cubed
- 1/4 cup fresh mint leaves
- 1/4 cup fresh lime juice (juice of 2 limes)
- 2 tablespoons sugar
- 1 1/2 cups club soda, chilled
- 4 lime wedges
- 4 mint sprigs
Combine melon, mint leaves, lime juice, and sugar in blender; blend until smooth. (Mixture may be blended in advance and chilled for several hours.)
Pour into 4-cup measuring cup and stir in enough club soda to measure 4 cups.
Pour into four glasses. Garnish with lime wedges and mint sprigs. Serve immediately.
