Diabetic Cooking


Apple salad with tangy citrus dressing

Preparation time: 15 minutes. Cooking time: 5 minutes.


  • 1/3 cup unsweetened orange juice
  • 2 teaspoons cornstarch
  • 1 teaspoon sugar
  • 1 large (3-inch diameter) Granny Smith apple
  • 1 large (3-inch diameter) Red Delicious apple
  • 1/4 cup Ocean Spray Reduced Sugar Craisins


Combine orange juice, cornstarch, and sugar in a small saucepan over medium heat with a whisk. Stirring constantly, bring to a low boil and cook until sauce thickens, about 2 minutes. Remove from heat and allow to cool to room temperature. Core both apples and dice; you should have approximately 2 cups. Place apple pieces and Craisins into a small salad bowl. Pour cooled dressing over top, stir well to combine. Serve immediately or chill before serving.

Yield: 4 servings. Serving size: 1/2 cup.
