Melon and butter lettuce salad

Preparation time: 15 minutes


 

1 small head butter lettuce, chopped (approximately 3 cups)
2 cups cubed cantaloupe
1 medium cucumber, peeled and sliced
1 small green pepper, chopped
2 tablespoons salad oil
1/4 teaspoon pepper
2 tablespoons vinegar

Place lettuce, melon, cucumber, and green pepper in a salad bowl. Whisk together salad oil, pepper, and vinegar and pour over salad. Toss salad and serve immediately.

Yield: 7 cups
