Whipped “cream”
Preparation time: 5 minutes
1 cup skim milk Pour milk into a metal mixing bowl and freeze uncovered for about 40 minutes (milk will be icy around the edges). Remove from the freezer and beat with an electric mixer on high until soft peaks form, about 2–3 minutes. Sprinkle sweetener over the whipped milk and add the vanilla extract. Beat 1/2–1 minute more. Use within 5–10 minutes.
