Hearty apple-cranberry oatmeal

Ingredients

  • 1/2 cup skim milk
  • 1/2 cup unsweetened apple juice
  • 1/2 cup quick oats (not instant oats)
  • 2 tablespoons sweetened dried cranberries
  • 1/2 small apple, peeled and chopped
  • 1/8 teaspoon cinnamon
  • Artificial sweetener

Directions

In a saucepan, combine milk, apple juice, oats, cranberries, chopped apple, and cinnamon. Bring to a boil over medium-high heat. Cover pan and reduce heat to medium-low. Simmer for 2–3 minutes or until oatmeal is desired consistency, stirring often. Stir in artificial sweetener to taste.

Yield: 1 1/4 cup. Serving size: 1/2 cup.
