Preparation time: 30 minutes

4 cups cubed potatoes
1 cup chopped leeks, both green and white portions
1 tablespoon capers, drained
1/2 teaspoon white pepper
1/2 cup fat-free mayonnaise
1 cup fat-free sour cream
Place potatoes in a pot and cover with water. Cover and bring to boil, cooking until just tender. Drain, transfer to a large mixing bowl, and chill. Stir in chopped leeks and capers, and add white pepper. Fold mayonnaise into sour cream and add mixture to potatoes, stirring until well blended. Chill until serving time.
