Cool tomato, cucumber, and onion toss

Preparation time: 10 minutes
Chilling time (optional): 30 minutes


 

1 large ripe tomato
1 cucumber (about 8 inches long)
1 small onion
1/4 cup fat-free Italian dressing

Cut tomato into bite-size pieces and place in a serving dish. Peel cucumber and remove seeds if desired. Cut cucumber into bite-size pieces and add to tomato. Thinly slice onion and separate into rings; you should have about 1 cup of rings. Add onion and dressing to other vegetables; toss to coat. Chill for 30 minutes if desired to allow the flavors to blend.

Yield: about 4 cups
Serving Size: 1/4 of recipe (about 1 cup)
