Preparation time: 45 minutes (includes cooking time)

2 cups fresh or frozen lima beans
4 slices uncooked turkey bacon (optional)
Vegetable cooking spray
1/2 cup dry bread crumbs
2 tablespoons margarine, melted
2 cups chopped fresh tomatoes
1/4 teaspoon ground black pepper
1/4 teaspoon celery salt
1/4 cup chopped onion
Place lima beans in a microwave-safe dish with a small amount of water; microwave on high for 6 to 9 minutes, then let stand, covered, for 2 minutes. Drain. Spread 3 or 4 paper towels on a plate, arrange bacon on the towels, and microwave on High for 3 minutes. Test for crispness, and continue microwaving, if necessary, checking for doneness every 30 seconds. Spray a 6-cup casserole with cooking spray. Mix bread crumbs with margarine in a large bowl. Add lima beans, tomatoes, pepper, salt, and onions. Pour mixture into casserole. Microwave on High for 10 to 12 minutes, until dish is bubbly. Crumble bacon on top.
