Recipe of the Week: Country French barley vegetable potage

As Amy Campbell mentions in her blog entry[1] this week, barley is rich in soluble fiber, which in turn can help lower cholesterol levels. This recipe combines sautéed fresh vegetables with barley, French seasonings, and a beefy broth to make a satisfying and heart-healthy soup.
