Recipe of the Week: Carrot oat bran muffins

In her blog entry[1] this week, Amy Campbell points out that substituting whole grains for refined grains in your diet can help lower triglyceride levels. Breakfast is an easy time to eat foods rich in whole grains such as these muffins, which feature whole wheat flour and oat bran (in addition to nutrient-rich carrots and zingy spices). And if you have whole-wheat pastry flour handy, you can substitute it for the all-purpose flour in the recipe to make these muffins 100% whole grain, a substitution that also adds an extra gram of fiber per muffin.
