1 pound ground round (ground beef)
1 medium onion, finely chopped
1 green bell pepper, finely chopped
1/2 cup finely chopped celery
2 teaspoons (or 2 cloves) minced garlic
1/2 teaspoon salt
1/8–1/4 teaspoon cayenne pepper (more or less to taste)
1/4 teaspoon ground black pepper
1/8 teaspoon paprika
1/4 teaspoon dried oregano
1 teaspoon dried parsley
1 tablespoon low-sodium Worcestershire sauce
1 cup uncooked brown rice
1 can (14 ounces) 50%-reduced-sodium, fat-free beef broth
I cup water
Brown ground round in a large, nonstick skillet. Drain off any fat. Stir in remaining ingredients. Cover and bring to a boil over high heat, reduce heat to medium and simmer 30–35 minutes, or until rice is tender; stir periodically.
